Ingredients
- 2 ½ cups all-purpose flour
- ½ cup almond flour
- ½ cup plant-based milk (such as almond or soy milk)
- ¼ cup maple syrup
- ¼ cup vegan butter, melted
- 1 packet (7g) instant yeast
- 1 teaspoon vanilla extract
- 1 teaspoon grated lemon zest
- 1 teaspoon grated orange zest
- ½ teaspoon salt
- ½ cup dried cranberries
- ½ cup chopped almonds
- Candied fruits and sliced almonds for decoration
Preparation
Step 1: Activate the Yeast
In a small bowl, combine the plant-based milk and maple syrup. Heat the mixture in the GM Pot using the «Yogurt» function at 40°C for 5 minutes. This will activate the yeast and help the dough rise.
Step 2: Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, almond flour, melted vegan butter, grated lemon zest, grated orange zest, vanilla extract, and salt. Mix well until the ingredients are evenly distributed.
Add the activated yeast mixture to the bowl and mix until a sticky dough forms. Knead the dough for a few minutes until it becomes smooth and elastic. You can use a stand mixer with a dough hook attachment or knead by hand.
Once the dough is ready, cover the bowl with a damp cloth or plastic wrap and let it rise in a warm place for about 1 hour or until it doubles in size.
Step 3: Shape the Roscón de Reyes
Punch down the risen dough to release any air bubbles. Transfer it to a lightly floured surface and shape it into a ring. You can use a round cake pan as a mold or shape it by hand. Make sure to leave a hole in the center.
Place the shaped dough on a baking sheet lined with parchment paper. Cover it again with a damp cloth or plastic wrap and let it rise for another 30 minutes.
Step 4: Baking
Preheat your GM Pot using the «Bake» function at 180°C.
Brush the top of the Roscón de Reyes with plant-based milk to give it a golden color. Sprinkle the dried cranberries and chopped almonds on top, gently pressing them into the dough.
Place the Roscón de Reyes in the preheated GM Pot and bake for approximately 25-30 minutes or until it turns golden brown and sounds hollow when tapped.

Once the Roscón de Reyes is completely cooled, decorate it with candied fruits and sliced almonds. You can create a pattern on top or simply place them randomly. Get creative with the design!
