Ingredients:
- 2 large eggplants
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 can of diced tomatoes (400g)
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
Preparation:
Step 1: Start by preparing the eggplants. Peel the skin off the eggplants and cut them into small cubes.
Step 2: Place the chopped onion and minced garlic in the Thermomix bowl. Select the «Saute» function and set the temperature to 100°C for 3 minutes. This will help release the flavors of the onion and garlic.
Step 3: Add the diced red bell pepper to the Thermomix bowl and sauté for another 2 minutes at 100°C.
Step 4: Next, add the chopped eggplants to the bowl and sauté for 5 minutes at 100°C. This will help soften the eggplants and bring out their natural flavors.
Step 5: Now, add the can of diced tomatoes, dried oregano, dried basil, salt, and pepper to the Thermomix bowl. Mix everything together using the «Reverse» function for 1 minute at 90°C. This will ensure that all the ingredients are well combined.
