Ingredients:
- For the sponge cake:
- 4 eggs
- 150g sugar
- 150g all-purpose flour
- 1 tsp baking powder
- For the pastry cream:
- 500ml milk
- 4 egg yolks
- 100g sugar
- 50g cornstarch
- 1 tsp vanilla extract
- For the whipped cream topping:
- 250ml heavy cream
- 50g powdered sugar
- For decoration:
- Grated chocolate
Preparation:
1. Prepare the sponge cake:
Preheat your Thermomix to 180°C.
Time: 10 minutes
- Place the eggs and sugar in the mixing bowl and mix for 3 minutes on speed 4.
- Add the flour and baking powder and mix for another 2 minutes on speed 4.
- Pour the batter into a greased and floured cake pan and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before slicing it into two layers.
2. Make the pastry cream:
Clean the mixing bowl of your Thermomix.
Time: 15 minutes
- Place the milk, egg yolks, sugar, cornstarch, and vanilla extract in the mixing bowl and cook for 10 minutes at 90°C on speed 4.
- Transfer the pastry cream to a bowl and cover with plastic wrap, pressing it against the surface to prevent a skin from forming. Let it cool completely.
3. Assemble the Tarta Mimosa:
Time: 10 minutes
- Place one layer of the sponge cake on a serving platter.
- Spread the pastry cream evenly over the cake layer.
- Top with the second layer of sponge cake.
- In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- Spread the whipped cream over the top of the cake.
- Sprinkle grated chocolate over the whipped cream for decoration.
