Ingredients:
- 1 red bell pepper
- 1 yellow bell pepper
- 1 eggplant
- 1 onion
- 2 cloves of garlic
- 6-8 anchovy fillets
- 1 sheet of puff pastry
- Olive oil
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Preparation:
1. Roast the Vegetables
Preheat the oven to 400°F (200°C). Place the red and yellow bell peppers, eggplant, onion, and garlic cloves on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 30-40 minutes, or until the vegetables are tender and slightly charred.
2. Prepare the Escalivada
Remove the roasted vegetables from the oven and allow them to cool. Peel the skin off the bell peppers and eggplant, then slice them into thin strips. Cut the onion into thin slices and mince the garlic cloves. Mix all the vegetables together in a bowl and season with a bit more olive oil, salt, and pepper.
3. Roll out the Puff Pastry
Roll out the sheet of puff pastry on a lightly floured surface to form a rectangular shape. Place it on a baking sheet lined with parchment paper.
