Lomo Mechado is a classic Spanish dish that combines tender beef loin with a flavorful brandy sauce. The pressure cooker will help to lock in the flavors and tenderize the meat, resulting in a delicious and succulent meal that is perfect for any occasion.

Ingredients:

  • 2 lbs beef loin
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 carrot, sliced
  • 1 celery stalk, chopped
  • 1 cup brandy
  • 2 cups beef broth
  • 1 bay leaf
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil

Preparation:

  1. Season the beef loin with salt, pepper, and paprika.
  2. Heat olive oil in the Olla GM pressure cooker on sauté mode.
  3. Add the beef loin and sear on all sides until browned. Remove from the pressure cooker and set aside.
  4. In the same pressure cooker, add the chopped onion, garlic, carrot, and celery. Sauté until softened.
  5. Return the beef loin to the pressure cooker.
  6. Pour in the brandy and beef broth. Add the bay leaf.
