Ingredients:

  • 1 cup Arborio rice
  • 1/2 cup white wine
  • 2 cups seafood stock
  • 1/2 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 lb mixed seafood (such as shrimp, scallops, and calamari)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation:

1. Prepare the Seafood:

First, clean and prepare the seafood of your choice. If using shrimp, peel and devein them. Cut the calamari into rings and the scallops into halves. Season the seafood with salt and pepper.

2. Sauté the Onion and Garlic:

Heat the olive oil in the Thermomix at 100°C for 2 minutes. Add the chopped onion and minced garlic and sauté at 100°C for 3 minutes, until softened and fragrant.

3. Add the Rice:

Insert the butterfly whisk attachment into the Thermomix. Add the Arborio rice and sauté at 100°C for 2 minutes, stirring constantly to coat the rice with the onion and garlic mixture.

4. Deglaze with Wine:

Pour in the white wine and cook at 100°C for 2 minutes to deglaze the pan, stirring continuously until the wine has evaporated.

5. Cook the Risotto:

Slowly add the seafood stock to the Thermomix and cook the risotto at 100°C for 15 minutes, stirring occasionally. The rice should be creamy and al dente at this point.

6. Add the Seafood:

Add the seasoned seafood to the risotto and cook at 100°C for an additional 5 minutes, until the seafood is cooked through.

7. Finish the Risotto:

Stir in the grated Parmesan cheese and heavy cream, and season with salt and pepper to taste. Cook at 100°C for 2 minutes to heat through and meld the flavors.

8. Serve:

Transfer the seafood risotto to serving plates and garnish with fresh parsley. Serve hot and enjoy this delicious and easy seafood risotto with your loved ones!
