Ingredients:
- 1 pound of mixed seafood (shrimp, crab, and scallops)
- 1/4 cup of butter
- 1/4 cup of flour
- 1 cup of heavy cream
- 1/4 cup of white wine
- 1/4 cup of chopped parsley
- Salt and pepper to taste
- 1/4 teaspoon of nutmeg
- 1/4 teaspoon of cayenne pepper
- 1/4 teaspoon of paprika
- Crackers or sliced baguette for serving
Preparation:
1. Cook the Seafood:
In a large skillet, melt the butter over medium heat. Add the mixed seafood and cook until they are opaque and cooked through, about 5-7 minutes. Remove the seafood from the skillet and set aside.
Temperature: Medium heat
Time: 5-7 minutes
2. Make the Roux:
Sprinkle the flour into the skillet with the remaining butter. Cook the flour, stirring constantly, until it forms a paste-like consistency, about 2 minutes.
Temperature: Medium heat
Time: 2 minutes
3. Add the Cream and Wine:
Slowly pour in the heavy cream and white wine, stirring continuously to avoid lumps. Cook until the mixture thickens, about 5 minutes.
Temperature: Medium heat
Time: 5 minutes
4. Season the Sauce:
Add the chopped parsley, salt, pepper, nutmeg, cayenne pepper, and paprika to the sauce. Stir well to combine and adjust seasoning to taste.
5. Blend the Seafood:
Transfer the cooked seafood to a food processor and pulse until finely chopped. Add the seafood mixture to the sauce and stir to combine.
6. Chill and Serve:
Transfer the Paté Marinero to a serving dish and refrigerate for at least 1 hour to allow the flavors to meld together. Serve with crackers or sliced baguette.
