Ingredients:

  • 2 zucchinis, grated
  • 1 carrot, grated
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 cup of flour
  • 1/2 cup of grated parmesan cheese
  • 4 eggs
  • 1/2 cup of olive oil
  • 1 tsp of baking powder
  • Salt and pepper to taste

Preparation:

Step 1: Preheat the Thermomix

Temperature: 180°C

Time: 5 minutes

Preheat your Thermomix to 180°C to ensure that it is ready for baking the vegetable cake.

Step 2: Prepare the Vegetables

Start by grating the zucchinis and carrot, and dicing the red and yellow bell peppers. Finely chop the onion and mince the garlic.

Step 3: Saute the Vegetables

Temperature: Varoma

Time: 10 minutes

  1. Place the grated zucchinis, carrot, diced bell peppers, chopped onion, and minced garlic in the Thermomix bowl.
  2. Add olive oil, salt, and pepper to taste.
  3. Saute the vegetables at Varoma temperature for 10 minutes, stirring occasionally.

Step 4: Mix the Batter

Time: 3 minutes

  1. Once the vegetables are sauteed, transfer them to a separate bowl and let them cool slightly.
  2. In the Thermomix bowl, add flour, grated parmesan cheese, eggs, baking powder, and the sauteed vegetables.
  3. Mix the batter for 3 minutes until well combined.

Temperature: 180°C

Time: 30 minutes
