Ingredients:

  • 3 kg ripe tomatoes
  • 1 large onion, chopped

  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for a bit of heat)

Preparation:

1. Prepare the Tomatoes

Start by washing the tomatoes and removing the stems. Cut a small X on the bottom of each tomato. Fill a large pot with water and bring it to a boil. Place the tomatoes in the boiling water for about 1 minute, then remove them and immediately transfer them to a bowl of ice water. This will make it easier to peel the tomatoes.

2. Peel and Chop the Tomatoes

Once the tomatoes have cooled, peel off the skins and chop them into small pieces. Discard the skins and set aside the chopped tomatoes in a bowl.

3. Cook the Onions and Garlic
