A Taste of Tradition: Potaje de Acelgas con Olla GM Brings Spanish Flavors to Your Home
Bring the flavors of Spain into your kitchen with this delicious and hearty Potaje de Acelgas recipe. Ingredients:
- 1 bunch of Swiss chard
- 1 can of chickpeas, drained and rinsed
- 2 potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bay leaf
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 6 cups vegetable broth
- Salt and pepper to taste
- Extra virgin olive oil
Preparation:
1. Prepare the Ingredients
Start by washing the Swiss chard thoroughly and separating the leaves from the stems. Chop the stems into small pieces and set aside. Roll up the leaves and chop them into ribbons.
2. Sauté the Aromatics
Turn on your Olla GM and select the «Sauté» function. Add a drizzle of olive oil to the pot and sauté the chopped onion and garlic until they become translucent, about 3 minutes.
Sauté at 120°C for 3 minutes.
3. Add the Spices
Add the bay leaf, smoked paprika, and cumin to the pot, stirring to combine with the aromatics. Let the spices toast for a minute to release their flavors.
4. Add the Vegetables
Add the chopped Swiss chard stems, diced potatoes, and chickpeas to the pot. Pour in the vegetable broth and season with salt and pepper to taste. Stir well to combine all the ingredients.
5. Pressure Cook
Secure the lid of your Olla GM and select the «Pressure Cook» function. Cook the potaje de acelgas at high pressure for 10 minutes to allow the flavors to meld together.
Cook at 120°C for 10 minutes.
6. Release Pressure and Serve
Once the cooking time is up, carefully release the pressure from the Olla GM according to the manufacturer’s instructions. Remove the lid and give the soup a final stir. Serve the potaje de acelgas hot, drizzled with a bit of olive oil and accompanied by crusty bread.
