Ingredients:
- 1 kg of beef stew meat, cut into bite-sized pieces
- 2 tablespoons of olive oil
- 1 large onion, finely chopped
- 4 cloves of garlic, minced
- 2 red bell peppers, sliced
- 2 tablespoons of sweet paprika
- 1 teaspoon of smoked paprika
- 1 teaspoon of ground cumin
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 2 cups of beef broth
- 1 can of diced tomatoes
- 1 bay leaf
- 2 tablespoons of cornstarch (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Preparation:
1. Sear the Beef:
Season the beef stew meat with salt and pepper. Select the «Saute» function on your Olla GM and heat the olive oil. Add the beef in batches and sear until browned on all sides. Remove the beef from the pot and set aside.

2. Saute the Aromatics:
Add the chopped onion and minced garlic to the pot. Cook until softened and fragrant, stirring occasionally. Add the sliced red bell peppers and continue cooking until they start to soften.

3. Add the Spices:
