Step 1: Prepare the Peaches
Start by washing the peaches under cold water to remove any dirt or impurities. Then, cut them in half and remove the pits. It’s up to you whether you prefer to peel the peaches or leave the skin on. If you decide to peel them, you can blanch the peaches in boiling water for 30 seconds and then transfer them to an ice bath to easily remove the skins. Cut the peaches into small chunks.
Step 2: Cook the Peaches
In your Thermomix bowl, add the peach chunks, sugar, and lemon juice. Set the temperature to Varoma and the time to 20 minutes. This will allow the peaches to soften and release their natural juices. Stir occasionally to ensure the sugar is fully dissolved.
Step 3: Blend the Mixture
Once the peaches are cooked and the sugar has dissolved, it’s time to blend the mixture into a smooth consistency. Set the temperature to 100°C and the time to 10 minutes. Gradually increase the speed from 1 to 10 to achieve a smooth texture. If you prefer a chunkier jam, blend for a shorter time or use the pulse function.
Step 4: Sterilize the Jars
While the peach jam is blending, prepare your jars for storing. Wash them with hot, soapy water and rinse thoroughly. Place the jars and lids in a large pot filled with water. Bring the water to a boil and let the jars simmer for 10 minutes. This process will sterilize the jars, ensuring the jam stays fresh for longer.
Step 5: Fill the Jars
Carefully remove the sterilized jars from the pot using tongs or a jar lifter. Place them upside down on a clean kitchen towel to drain excess water. Once the peach jam is ready, pour it into the sterilized jars, leaving about 1/4 inch of headspace at the top. Use a clean cloth to wipe any spills or drips on the rim of the jars.
Step 6: Seal and Store
Before sealing the jars, make sure the rims are clean and dry. Place the lids on top and screw the bands tightly. For additional preservation, you can process the jars in a water bath canner for 10 minutes. Otherwise, let the jars cool at room temperature and check for a proper seal by pressing down on the lids. If the lids don’t pop back, they are sealed correctly. Store the jars in a cool, dark place for up to a year.
