Ingredients:
- 500g bread flour
- 1 packet of dry yeast
- 1 tsp sugar
- 1 tsp salt
- 250ml warm water
- 2 large onions, thinly sliced
- 200g mozzarella cheese, shredded
- 200g provolone cheese, shredded
- 2 tbsp olive oil
- Salt and pepper to taste
Preparation:
1. Prepare the Dough:
- In the Thermomix bowl, add the bread flour, dry yeast, sugar, and salt. **Mix for 10 seconds at speed 5.**
- With the Thermomix running at speed 2, slowly pour in the warm water. **Knead for 2 minutes.**
- Transfer the dough to a lightly floured surface and knead for a few minutes until smooth. Place the dough in a greased bowl, cover with a towel, and let it rise for 1 hour.
2. Caramelize the Onions:
- While the dough is rising, heat the olive oil in a pan over medium heat. Add the thinly sliced onions and cook until caramelized, about 20 minutes. Season with salt and pepper to taste.
3. Roll out the Dough:
- Preheat your oven to 220°C.
- Once the dough has doubled in size, punch it down and divide it in half. Roll out each half into a circle to fit your pizza pan.
4. Assemble the Pizza:
- Place one of the rolled-out dough circles on a pizza pan. Sprinkle half of the mozzarella and provolone cheese over the dough.
- Spread the caramelized onions evenly over the cheese.
- Top with the remaining cheese.
- Place the second rolled-out dough circle on top and pinch the edges to seal the pizza.
5. Bake the Pizza:
- Bake the Fugazzeta Pizza in the preheated oven for 20-25 minutes, or until the crust is golden and the cheese is bubbly.
- Remove from the oven and let it cool slightly before slicing and serving.
