Ingredients:

  • 500g of cooked beef or chicken, shredded
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup of green olives, sliced
  • 1/4 cup of capers
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 3 tablespoons of red wine vinegar
  • Salt and pepper to taste

Preparation:

Step 1: Shred the Cooked Meat

**Varoma temperature, 5 minutes**

Place the cooked beef or chicken in the Varoma steaming tray of your Thermomix. Steam for 5 minutes to warm up the meat and make it easier to shred.

Step 2: Shred the Meat

**Reverse speed 4, 5 seconds**

Remove the meat from the Varoma steaming tray and place it in the mixing bowl of your Thermomix. Use the reverse speed function at speed 4 for 5 seconds to shred the meat into small pieces. Transfer the shredded meat to a large mixing bowl.

Step 3: Prepare the Vegetables

**Speed 5, 3 seconds**

Add the diced red bell pepper, green bell pepper, red onion, tomatoes, green olives, capers, and fresh parsley to the mixing bowl of your Thermomix. Pulse on speed 5 for 3 seconds to chop the vegetables into small pieces. Transfer the chopped vegetables to the mixing bowl with the shredded meat.

Step 4: Make the Vinaigrette

**100°C temperature, 3 minutes**

In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the vinaigrette. Place the vinaigrette in the mixing bowl of your Thermomix and heat it at 100°C for 3 minutes to blend the flavors.

Step 5: Mix Everything Together

**Reverse speed 2, 10 seconds**

Pour the warm vinaigrette over the shredded meat and chopped vegetables in the mixing bowl. Use the reverse speed function at speed 2 for 10 seconds to mix everything together and coat the ingredients with the vinaigrette.

Step 6: Chill and Serve

Transfer the salpicón to a serving dish and cover it with plastic wrap. Chill in the refrigerator for at least 1 hour to allow the flavors to meld together. Serve the delicious salpicón cold as a refreshing appetizer or light main course.
