Ingredients:

  • 200g almonds
  • 200g sugar
  • 50g butter
  • 50g all-purpose flour
  • 2 eggs
  • 1 teaspoon vanilla extract

Preparation:

  1. Preheat your oven to 180°C (356°F).
  2. Place the almonds in your Thermomix bowl and grind them for 10 seconds on speed 9. Set aside.
  3. Add the sugar to the bowl and mill for 10 seconds on speed 10.
  4. Melt the butter in a small saucepan over low heat, then add it to the Thermomix bowl along with the ground almonds and flour.
  5. Beat the eggs in a separate bowl and then add them to the Thermomix bowl along with the vanilla extract.
  6. Mix everything together for 20 seconds on speed 4 until well combined.
  7. Line a baking sheet with parchment paper.
  8. Drop spoonfuls of the Tejas batter onto the prepared baking sheet, leaving enough space between each cookie as they will spread during baking.
  9. Bake in the preheated oven for 10-12 minutes or until the edges of the Tejas are golden brown.
  10. Remove from the oven and let the Tejas cool completely on the baking sheet before transferring them to a wire rack.
