Ingredients:

  • For the sponge cake:
    1. 4 eggs
    2. 150g sugar
    3. 150g all-purpose flour
    4. 1 tsp baking powder

  • For the pastry cream:
    1. 500ml milk
    2. 4 egg yolks
    3. 100g sugar
    4. 50g cornstarch
    5. 1 tsp vanilla extract

  • For the whipped cream topping:
    1. 250ml heavy cream
    2. 50g powdered sugar

  • For decoration:
    1. Grated chocolate

Preparation:

1. Prepare the sponge cake:

Preheat your Thermomix to 180°C.

Time: 10 minutes

  1. Place the eggs and sugar in the mixing bowl and mix for 3 minutes on speed 4.
  2. Add the flour and baking powder and mix for another 2 minutes on speed 4.
  3. Pour the batter into a greased and floured cake pan and bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the cake cool completely before slicing it into two layers.

2. Make the pastry cream:

Clean the mixing bowl of your Thermomix.

Time: 15 minutes

  1. Place the milk, egg yolks, sugar, cornstarch, and vanilla extract in the mixing bowl and cook for 10 minutes at 90°C on speed 4.
  2. Transfer the pastry cream to a bowl and cover with plastic wrap, pressing it against the surface to prevent a skin from forming. Let it cool completely.

3. Assemble the Tarta Mimosa:

Time: 10 minutes

  1. Place one layer of the sponge cake on a serving platter.
  2. Spread the pastry cream evenly over the cake layer.
  3. Top with the second layer of sponge cake.
  4. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  5. Spread the whipped cream over the top of the cake.
  6. Sprinkle grated chocolate over the whipped cream for decoration.
