Impress your guests with this elegant and flavorful dish of Stuffed Calamari with Balsamic Vinaigrette. The tender calamari is filled with a delicious mixture of breadcrumbs, herbs, and cheese, then topped with a tangy balsamic vinaigrette. This recipe is made easy with the help of a Thermomix, ensuring perfectly cooked calamari every time.

Ingredients:

  • 6 medium-sized calamari tubes
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard

Preparation:

  1. Preheat the oven to 350°F (180°C).
  2. Prepare the calamari tubes by rinsing them under cold water and patting them dry with paper towels.
  3. In a bowl, combine the breadcrumbs, Parmesan cheese, garlic, parsley, olive oil, salt, and pepper. Mix well to combine.
  4. Stuff each calamari tube with the breadcrumb mixture, leaving some room at the top for the filling to expand during cooking.
  5. Secure the tops of the calamari tubes with toothpicks to prevent the filling from spilling out.
  6. Place the stuffed calamari tubes in a baking dish and drizzle with olive oil.
  7. Bake in the preheated oven for 20-25 minutes, or until the calamari is cooked through and the filling is golden brown.
  8. While the calamari is baking, prepare the balsamic vinaigrette. In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, honey, mustard, salt, and pepper.
  9. Once the calamari is done, remove them from the oven and drizzle with the balsamic vinaigrette.
  10. Serve the Stuffed Calamari with Balsamic Vinaigrette hot, garnished with extra parsley if desired.
