Ingredients:
- 1 kg ripe tomatoes
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- 1 teaspoon sugar
- 1/2 teaspoon red pepper flakes (optional)
- Ice cubes for serving
- Fresh basil leaves for garnish
Preparation:
1. Prepare the Tomatoes
Start by washing the tomatoes and removing the stems. Bring a large pot of water to a boil and prepare a bowl of ice water. Score a small «X» on the bottom of each tomato and carefully drop them into the boiling water for 30 seconds. Remove the tomatoes with a slotted spoon and immediately transfer them to the ice water to cool. Peel off the skins and chop the tomatoes into small pieces.

2. Sauté the Aromatics
In a large saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they are softened and fragrant, about 5 minutes. Stir in the chopped basil, thyme, and rosemary, and cook for another minute to release their flavors.

3. Simmer the Tomato Mixture
Add the chopped tomatoes to the saucepan with the sautéed aromatics. Season with salt, pepper, sugar, and red pepper flakes, if using. Bring the mixture to a simmer and cook for about 20 minutes, stirring occasionally, until the tomatoes have broken down and the flavors have melded together.

4. Blend the Mixture
