Ingredients:
- 2 lbs of beef tenderloin
- 1/2 cup of brandy
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 carrot, sliced
- 1 cup of beef broth
- 1/2 cup of red wine
- 2 tbsp of olive oil
- Salt and pepper to taste
Preparation:
Marinating the Beef:
1. Cut the beef tenderloin into small pieces and place them in a bowl.
2. Add the brandy, chopped onion, minced garlic, and a pinch of salt and pepper to the bowl.
3. Cover the bowl with plastic wrap and let the beef marinate in the fridge for at least 2 hours.
Cooking in the Olla GM:
1. Set the Olla GM to «Manual» mode and select the «Meat» setting.
2. Add the olive oil to the pot and let it heat up.
3. Add the marinated beef to the pot and sear it on all sides until browned.
4. Cook the beef for 30 minutes at 180°C.
5. Add the sliced bell pepper and carrot to the pot and sauté for another 5 minutes.
6. Pour in the beef broth and red wine, stirring to combine all the ingredients.
7. Close the lid of the Olla GM and cook for an additional 20 minutes at 160°C.
8. Once the beef is tender and cooked through, remove it from the pot and set it aside to rest.
Finishing Touches:
1. Strain the liquid from the pot and transfer it to a saucepan.
2. Bring the liquid to a simmer and let it reduce until it thickens into a rich sauce.
3. Season the sauce with salt and pepper to taste.
4. Slice the beef and arrange it on a serving platter.
5. Pour the sauce over the beef and garnish with fresh herbs, if desired.
