Experience the Delicious Tradition of Coquetes de San Antoní with monsieur cuisine
Coquetes de San Antoní are a traditional Catalan pastry that dates back to the 18th century. These delicious pastries are typically enjoyed during the Feast of San Antoní, which takes place on January 17th. Made with a flaky pastry dough and filled with a sweet filling, these coquetes are a delightful treat that are perfect for any occasion.
Ingredients:
- 2 cups of all-purpose flour
- 1/2 cup of sugar
- 1/2 cup of butter, softened
- 1 egg
- 1/4 cup of milk
- 1/2 teaspoon of vanilla extract
- 1/2 cup of ground almonds
- 1/4 cup of honey
- 1/4 cup of powdered sugar
- Oil for frying
Preparation:
- In a large mixing bowl, combine the flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the egg, milk, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
- Turn the dough out onto a lightly floured surface and knead until smooth. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- In a small bowl, mix together the ground almonds and honey to create the filling.
- Roll out the dough on a floured surface to about 1/4 inch thickness. Cut out circles using a cookie cutter or a glass.
- Place a small spoonful of the almond filling in the center of each circle. Fold the dough in half to enclose the filling and crimp the edges with a fork to seal.
- In a deep fryer or large pot, heat oil to 350°F. Fry the coquetes in batches until golden brown, about 2-3 minutes per side.
- Remove the coquetes from the oil and drain on paper towels. Sprinkle with powdered sugar while still warm.
