Preparation

1. Clean and Soak the Clams

Start by cleaning the clams thoroughly under cold running water, removing any dirt or sand. Place them in a bowl filled with cold water and let them soak for about 30 minutes to release any grit. Rinse them once more before cooking.

2. Sauté the Aromatics

In the Olla GM, select the «Sauté» function and heat the olive oil. Add the chopped onion, minced garlic, diced red and green bell peppers, and sauté until they become soft and fragrant. This should take about 5 minutes.

3. Add the Tomatoes and Spices

Stir in the diced tomatoes, smoked paprika, saffron threads, and bay leaf. Cook for an additional 2 minutes to allow the flavors to meld together.

4. Deglaze with Wine

Pour in the white wine and use a wooden spoon to scrape any browned bits from the bottom of the pot. Let the wine simmer for a minute to cook off the alcohol.

5. Pressure Cook the Clams

6. Release Pressure and Serve
