Ingredients:
- 1 1/2 cups of crushed chocolate cookies
- 1/3 cup of melted butter
- 8 oz of mascarpone cheese, softened
- 1/2 cup of powdered sugar
- 1 tsp of vanilla extract
- 1 cup of heavy cream
- 8 oz of MAMBO chocolate, chopped
- 1/4 cup of hot water
- 1/4 cup of chocolate shavings for garnish
Preparation:
1. Prepare the Crust
In a bowl, combine the crushed chocolate cookies and melted butter until well mixed. Press the mixture into the bottom and up the sides of a tart pan. Refrigerate for 30 minutes to set.
2. Make the Chocolate Filling
In a mixing bowl, beat the softened mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the mascarpone mixture until well combined.
3. Melt the MAMBO Chocolate
In a heatproof bowl, combine the chopped MAMBO chocolate and hot water. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water. Stir the chocolate mixture until smooth and fully melted. Remove from heat and let it cool slightly.
4. Incorporate the Chocolate into the Filling
Gently fold the melted chocolate into the mascarpone and whipped cream mixture until evenly distributed. Pour the chocolate filling into the prepared crust and smooth the top with a spatula. Refrigerate for at least 4 hours to set.
5. Garnish and Serve
