Ingredients:

  • 1 cup brewed coffee, cooled
  • 1/2 cup peach liqueur
  • 1 package ladyfinger cookies
  • 3 ripe peaches, peeled and sliced
  • 1 cup mascarpone cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 tablespoons cocoa powder

Preparation:

1. Prepare the Coffee Mixture

In a shallow dish, combine the brewed coffee and peach liqueur. This will be used to soak the ladyfinger cookies.

Time: 5 minutes

2. Layer the Ladyfingers and Peaches

Dip each ladyfinger cookie into the coffee mixture, making sure to coat both sides. Place a layer of soaked cookies at the bottom of a serving dish.

Top the layer of cookies with sliced peaches, creating an even layer of fruit.

Time: 10 minutes

3. Prepare the Mascarpone Filling

In a mixing bowl, combine the mascarpone cheese, sugar, and vanilla extract. Mix until smooth and well combined.
