Crema de Calabaza y Zanahoria is a delicious and nutritious soup that combines the sweetness of pumpkin and carrots with savory spices. Ingredients:

  • 1 medium pumpkin, peeled and diced
  • 4 large carrots, peeled and sliced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • Chopped fresh cilantro for garnish

Preparation:

  1. Preheat MAMBO to sauté mode at 350°F.
  2. Add olive oil to the MAMBO pot and sauté the onion and garlic until translucent.
  3. Stir in the ground cumin, coriander, paprika, salt, and pepper.
  4. Add the diced pumpkin and sliced carrots to the pot and cook for 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and coconut milk, then close the lid and set MAMBO to pressure cook mode at 400°F for 10 minutes.
  6. Once the pressure cooking is done, carefully release the steam and open the lid.
