Ingredients:
- 1 medium pumpkin, peeled and diced
- 4 large carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 tablespoons olive oil
- Chopped fresh cilantro for garnish
Preparation:
- Preheat MAMBO to sauté mode at 350°F.
- Add olive oil to the MAMBO pot and sauté the onion and garlic until translucent.
- Stir in the ground cumin, coriander, paprika, salt, and pepper.
- Add the diced pumpkin and sliced carrots to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and coconut milk, then close the lid and set MAMBO to pressure cook mode at 400°F for 10 minutes.
