Step 8: Add the chorizo sausage to the MAMBO and cook for 5 minutes at 160°C, until it starts to release its oils.

Step 9: Sprinkle the paprika, dried thyme, salt, and pepper over the ingredients in the MAMBO. Stir well to combine.

Step 10: Add the cubed potatoes to the MAMBO and pour in the vegetable broth. Stir gently to mix all the ingredients.

Step 11: Close the lid of the MAMBO and cook for 15 minutes at 120°C, allowing the potatoes to soften and absorb the flavors.

Step 12: After 15 minutes, open the lid and give the mixture a good stir. Close the lid again and cook for an additional 10 minutes at 120°C.

Step 13: Once the potatoes are tender and the flavors have melded together, remove the MAMBO from heat.

Step 14: Serve the Patatas a la Riojana hot, garnished with fresh parsley.
