Ingredients
- 1 lb beef shank
- 1 lb pork ribs
- 1 lb chicken thighs
- 1 chorizo sausage
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, peeled and diced
- 1 can garbanzo beans, drained and rinsed
- 1 can diced tomatoes
- 1 bay leaf
- 1 tsp paprika
- Salt and pepper to taste
- 8 cups water
Preparation
1. Sear the Meats
**Heat** the GM Pot on the sauté setting. **Add** the beef shank, pork ribs, chicken thighs, and chorizo sausage to the pot. **Sear** the meats on all sides until browned, about 5 minutes per side. **Remove** the meats from the pot and set aside.
2. Sauté the Vegetables
**Add** the chopped onion, carrots, and potatoes to the pot. **Sauté** until the vegetables are soft, about 5 minutes.
3. Add the Rest of the Ingredients
**Return** the seared meats to the pot. **Add** the garbanzo beans, diced tomatoes, bay leaf, paprika, salt, and pepper. **Pour** in the water to cover all the ingredients.
4. Pressure Cook
**Close** the GM Pot lid and **set** the pressure cooker to high pressure for 30 minutes. **Let** the pressure release naturally for 10 minutes before manually releasing the remaining pressure.
5. Serve and Enjoy
**Open** the GM Pot lid and **discard** the bay leaf. **Serve** the Caldo de Puchero ‘Viudo’ hot in bowls. **Enjoy** with some crusty bread on the side.
