Ingredients:
- 2 zucchinis, grated
- 1 carrot, grated
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 cup of flour
- 1/2 cup of grated parmesan cheese
- 4 eggs
- 1/2 cup of olive oil
- 1 tsp of baking powder
- Salt and pepper to taste
Preparation:
Step 1: Preheat the Thermomix
Temperature: 180°C
Time: 5 minutes
Preheat your Thermomix to 180°C to ensure that it is ready for baking the vegetable cake.
Step 2: Prepare the Vegetables
Start by grating the zucchinis and carrot, and dicing the red and yellow bell peppers. Finely chop the onion and mince the garlic.
Step 3: Saute the Vegetables
Temperature: Varoma
Time: 10 minutes
- Place the grated zucchinis, carrot, diced bell peppers, chopped onion, and minced garlic in the Thermomix bowl.
- Add olive oil, salt, and pepper to taste.
- Saute the vegetables at Varoma temperature for 10 minutes, stirring occasionally.
Step 4: Mix the Batter
Time: 3 minutes
- Once the vegetables are sauteed, transfer them to a separate bowl and let them cool slightly.
- In the Thermomix bowl, add flour, grated parmesan cheese, eggs, baking powder, and the sauteed vegetables.
- Mix the batter for 3 minutes until well combined.
Step 5: Bake the Vegetable Cake
Temperature: 180°C
Time: 30 minutes
- Grease a cake tin and pour the vegetable cake batter into it.
- Bake the vegetable cake in the preheated oven at 180°C for 30 minutes, or until golden brown and cooked through.
