- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 baguette, sliced
- 1 cup grated Gruyere cheese
Preparation:
Step 1: Saute Onions
1. In your Thermomix, heat the butter and olive oil at 100°C for 3 minutes.
2. Add the sliced onions and garlic to the Thermomix and saute at 100°C for 15 minutes, until the onions are caramelized.
Step 2: Deglaze the Pot
1. Add the red wine to the Thermomix and deglaze the pot by scraping up any browned bits from the bottom at 100°C for 3 minutes.
Step 3: Cook the Soup
1. Add the beef broth, sugar, salt, and pepper to the Thermomix with the onions and wine mixture.
2. Cook the soup at 100°C for 15 minutes.
Step 4: Prepare the Baguette and Cheese
1. While the soup is cooking, preheat your oven to 200°C.
2. Place the sliced baguette on a baking sheet and toast in the oven for 5 minutes, or until crispy.
3. Sprinkle the grated Gruyere cheese on top of the toasted baguette slices and return to the oven for 2 minutes, or until the cheese is melted and bubbly.
