Ingredients:
- 2 pounds of chicken, cut into pieces
- 2 cups of long-grain rice
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup of frozen peas
- 1 cup of diced carrots
- 2 tablespoons of olive oil
- 2 tablespoons of MAMBO seasoning
- 4 cups of chicken broth
- Salt and pepper to taste
Preparation:
Step 1: Season the chicken pieces with salt, pepper, and 1 tablespoon of MAMBO seasoning. Heat the olive oil in a large pot over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
Step 2: In the same pot, add the diced onion, minced garlic, red bell pepper, and green bell pepper. Cook until the vegetables are softened, about 5 minutes. Stir in the remaining tablespoon of MAMBO seasoning.
Step 3: Add the rice to the pot and stir to coat it with the vegetable mixture. Cook for 2-3 minutes, until the rice is slightly toasted.
Step 4: Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15 minutes.
Step 5: After 15 minutes, add the frozen peas and diced carrots to the pot. Stir everything together, cover the pot again, and continue simmering for another 10 minutes, or until the rice is cooked and the vegetables are tender.
Step 6: While the rice is cooking, place the browned chicken pieces on a baking sheet and bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the chicken is cooked through.
Step 7: Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Then, shred or chop the chicken into smaller pieces.
Step 8: When the rice is ready, remove the pot from the heat and let it sit, covered, for 5 minutes. Then, fluff the rice with a fork to separate the grains.
Step 9: Serve the arroz con pollo by placing a generous portion of rice on a plate and topping it with the shredded or chopped chicken. Garnish with fresh cilantro, if desired.
With the help of MAMBO seasoning, you have elevated the traditional arroz con pollo to new heights. The flavorful blend of spices adds a delicious twist to this classic dish, making it a standout meal that will impress everyone at your table. Enjoy!
