Ingredients:

  • 1 box of lasagna noodles
  • 1 can of tuna, drained
  • 1 cup of diced carrots
  • 1 cup of diced zucchini
  • 1 cup of diced bell peppers
  • 1 cup of diced mushrooms
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can of crushed tomatoes
  • 1 cup of tomato sauce
  • 2 cups of shredded mozzarella cheese
  • 1 cup of grated Parmesan cheese
  • 1 tablespoon of olive oil
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • MAMBO seasoning for topping

Preparation:

1. Preheat the oven

Preheat your oven to 375°F (190°C).

2. Cook the lasagna noodles

Cook the lasagna noodles according to the package instructions. Drain and set aside.

3. Prepare the vegetable and tuna filling

In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until fragrant.

Add the diced carrots, zucchini, bell peppers, and mushrooms to the skillet. Cook until the vegetables are tender.

Stir in the drained tuna, crushed tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Let the mixture simmer for 5-10 minutes.

4. Assemble the lasagna

Spread a layer of the vegetable and tuna filling on the bottom of a baking dish.

Layer lasagna noodles on top of the filling, followed by a sprinkle of mozzarella cheese and Parmesan cheese.

Repeat the layers until all the ingredients are used up, finishing with a layer of cheese on top.

5. Bake the lasagna

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

6. Serve and enjoy

Remove the lasagna from the oven and let it cool for a few minutes before slicing and serving.

Sprinkle MAMBO seasoning on top for an extra burst of flavor.

7. Store leftovers

If you have any leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
