In this recipe, we will guide you through the steps to create a deliciously crispy leche frita that will surely impress your family and friends.

Ingredients:

  • 1 liter of whole milk
  • 150 grams of granulated sugar
  • 100 grams of cornstarch
  • 1 cinnamon stick
  • 1 lemon peel
  • 2 eggs
  • 100 grams of all-purpose flour
  • 100 grams of breadcrumbs
  • Vegetable oil for frying
  • Powdered sugar for dusting

Preparation:

Step 1: Infusing the Milk

In the Mambo bowl, combine the milk, granulated sugar, cinnamon stick, and lemon peel. Set the temperature to 90°C and the time to 10 minutes. Press start to begin the infusion process. This will allow the milk to absorb the flavors of the cinnamon and lemon.

Step 2: Creating the Base

In a separate bowl, whisk the eggs and cornstarch together until well combined. Gradually pour the infused milk into the egg mixture, whisking continuously to prevent lumps from forming. Once fully combined, transfer the mixture back to the Mambo bowl.

Step 3: Cooking the Mixture

Set the temperature to 90°C and the time to 10 minutes. Press start to begin cooking the mixture. Stir occasionally to ensure even cooking. The mixture should thicken and become creamy in texture.

Step 4: Cooling and Shaping

Once the mixture has thickened, transfer it to a baking dish lined with parchment paper. Smooth the surface with a spatula and allow it to cool completely at room temperature. Once cooled, refrigerate for at least 2 hours to set.

Step 5: Breading the Leche Frita

In three separate bowls, place the all-purpose flour, beaten eggs, and breadcrumbs. Cut the set leche frita into desired shapes, such as squares or rectangles. Coat each piece with flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs.

Step 6: Frying the Leche Frita

In a deep pan, heat vegetable oil to 180°C. Carefully place the breaded leche frita pieces into the hot oil and fry until golden brown and crispy, turning them occasionally for even frying. Once fried, remove from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Step 7: Serving

Sprinkle the fried leche frita with powdered sugar and serve them warm. They can be enjoyed as they are or accompanied by a scoop of vanilla ice cream or a drizzle of caramel sauce.

Now you can impress your loved ones with this deliciously crispy leche frita made with the Mambo kitchen robot. Enjoy!
