Ingredients:
- 1 lb. of beef stew meat, cut into small cubes
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 cup of frozen peas
- 1 can of crushed tomatoes
- 1 cup of beef broth
- 1/2 cup of red wine
- 2 tbsp. of tomato paste
- 1 tsp. of dried oregano
- 1 tsp. of dried thyme
- Salt and pepper to taste
- 2 tbsp. of olive oil
- Fresh parsley for garnish
Preparation:
1. Brown the Beef:
Heat the olive oil in a large pot over medium-high heat. Add the beef stew meat and season with salt and pepper. Cook, stirring occasionally, until the beef is browned on all sides. This should take about 5-7 minutes.
2. Sauté the Aromatics:
Add the chopped onion, minced garlic, diced carrot, and diced celery to the pot with the browned beef. Cook, stirring occasionally, until the vegetables are softened and fragrant. This should take about 5 minutes.
3. Deglaze the Pot:
Pour in the red wine and stir, scraping up any browned bits from the bottom of the pot. Let the wine simmer and reduce by half, about 2-3 minutes.
4. Add the Tomatoes and Broth:
Stir in the crushed tomatoes, beef broth, tomato paste, dried oregano, and dried thyme. Bring the mixture to a simmer, then reduce the heat to low and cover. Let the ragú simmer gently for about 1 hour, stirring occasionally.
5. Add the Peas:
After the ragú has simmered for an hour, stir in the frozen peas and continue to cook for an additional 10 minutes until the peas are heated through.
6. Serve and Enjoy:
Once the ragú is ready, taste and adjust the seasoning with salt and pepper as needed. Serve the ragú hot over cooked pasta, rice, or with crusty bread. Garnish with fresh parsley before serving. Enjoy this savory and satisfying dish with your loved ones!
