Arroz con pollo is a classic dish in many Latin American countries, but we are going to give it a delicious twist by adding MAMBO seasoning. Ingredients:
- 2 cups of long-grain rice
- 1 pound of chicken thighs, cut into bite-sized pieces
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves of garlic, minced
- 2 tomatoes, diced
- 2 cups of chicken broth
- 1 tablespoon of MAMBO seasoning
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
Preparation:
1. Prepare the Ingredients
Start by preparing all the ingredients. Wash the rice and set it aside to drain. Cut the chicken thighs into bite-sized pieces and season with salt, pepper, and half of the MAMBO seasoning. Dice the onion, red bell pepper, green bell pepper, and tomatoes. Mince the garlic cloves.
2. Sear the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Add the seasoned chicken thighs and sear until browned on all sides, about 5 minutes. Remove the chicken from the skillet and set aside.
