- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 1 tablespoon honey
Preparation:
1. Prepare the Chicken Meatballs:
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Heat 1 tablespoon of olive oil in a pan over medium heat.
- Cook the meatballs in batches, turning occasionally, until browned on all sides. This should take about 8-10 minutes. Remove from the pan and set aside.
2. Make the Mustard Sauce:
- In the same pan, add the remaining tablespoon of olive oil.
- Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream, Dijon mustard, whole grain mustard, and honey. Season with salt and pepper to taste.
- Simmer the sauce for about 5 minutes, allowing it to thicken slightly.
3. Combine the Meatballs and Sauce:
- Return the cooked meatballs to the pan with the mustard sauce.
- Gently stir to coat the meatballs in the sauce.
- Simmer for an additional 5 minutes to allow the flavors to meld together.
4. Serve and Enjoy:
Once the meatballs are cooked through and the sauce is thickened to your liking, remove from heat.
Serve the chicken meatballs in mustard sauce hot, garnished with additional parsley if desired. This dish pairs well with rice, mashed potatoes, or crusty bread to soak up the delicious sauce.
