Ingredients:

  • 1 liter of whole milk
  • 150g of sugar
  • 100g of cornstarch
  • 1 cinnamon stick
  • Lemon peel
  • 1 egg
  • Breadcrumbs
  • Vegetable oil
  • Cinnamon powder for garnish

Preparation:

1. Infusing the Milk

In a saucepan, pour the whole milk and add the sugar, cinnamon stick, and lemon peel. Heat the mixture over medium heat until it starts to simmer. Let it simmer for about 5 minutes to infuse the flavors into the milk. Then, remove from heat and let it cool down.

2. Making the Leche Frita Base

In a bowl, whisk together the cornstarch and egg until well combined. Slowly pour the infused milk into the bowl while continuing to whisk, ensuring there are no lumps in the mixture. Once combined, pour the mixture back into the saucepan and cook over low heat, stirring constantly until it thickens and becomes a custard-like consistency.

3. Setting the Mixture

Transfer the thickened mixture into a rectangular dish and smooth it out to create an even layer. Let it cool down and refrigerate for at least 2 hours, or until it sets completely and becomes firm.

Once the mixture has set, cut it into small squares or rectangles. Dip each piece into beaten egg and then coat with breadcrumbs. In a frying pan, heat vegetable oil over medium-high heat and fry the coated leche frita pieces until they are golden brown and crispy on the outside.
