Experience the Flavors of Spain with Fideua de Lomo Adobado con MAMBO
Experience the rich and vibrant flavors of Spain with this delicious Fideua de Lomo Adobado con MAMBO recipe. This traditional Spanish dish is a twist on the classic paella, featuring tender pieces of marinated pork loin cooked with noodles in a savory broth. With the help of the MAMBO multi-cooker, you can easily recreate this authentic Spanish dish in the comfort of your own home.
Ingredients:
- 500g pork loin, cut into bite-sized pieces
- 2 tablespoons of olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 tomato, diced
- 1 teaspoon of smoked paprika
- 1 teaspoon of ground cumin
- 1 teaspoon of dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 400g fideua noodles
- 800ml chicken or vegetable broth
- Fresh parsley, chopped for garnish
Preparation:
Marinate the Pork Loin
In a bowl, combine the pork loin pieces with the smoked paprika, ground cumin, dried oregano, salt, and pepper. Mix well to ensure the pork is evenly coated in the spices. Cover the bowl and marinate the pork in the refrigerator for at least 30 minutes to allow the flavors to meld together.
Sauté the Aromatics
Turn on the MAMBO multi-cooker and select the «Sauté» function. Add the olive oil to the pot and heat it up. Add the chopped onion and minced garlic, and sauté until they are soft and fragrant, about 3-4 minutes.
Cook the Pork Loin
Add the marinated pork loin pieces to the pot and cook until they are browned on all sides, about 5-6 minutes. Stir in the diced red and green bell peppers, as well as the tomato, and cook for an additional 2-3 minutes.
Add the Noodles and Broth
Stir in the fideua noodles and chicken or vegetable broth. Add the bay leaf and season with more salt and pepper to taste. Close the lid of the multi-cooker and set it to cook on «Pressure Cook» mode at high pressure for 5 minutes.
Release the Pressure
Once the cooking cycle is complete, quick release the pressure and carefully open the lid. Give the fideua a good stir to ensure the noodles are evenly cooked and coated in the flavorful broth.
Serve and Enjoy
Transfer the Fideua de Lomo Adobado to a serving dish and garnish with freshly chopped parsley. Serve hot and enjoy the rich and aromatic flavors of Spain right at home.
