Delicious and Easy: How to Make Lasaña de Pisto at Home

Ingredients:

  • 1 box of lasagna noodles
  • 1 eggplant, diced

  • 1 can of crushed tomatoes
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil

  • 2 cups of grated mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • Olive oil

Preparation:

1. Preparing the Vegetable Filling

Start by preheating your oven to 375°F. In a large skillet, heat some olive oil over medium heat. Add the diced eggplant, zucchini, red bell pepper, yellow bell pepper, onion, and minced garlic. Cook until the vegetables are soft and slightly browned, about 10 minutes.
