Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2 bananas)
- 1 cup diced fresh pineapple
- 1/2 cup shredded coconut
Instructions:
1. Preheat the oven and prepare the pan
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or cooking spray.
Bake time: 10 minutes
2. Mix the dry ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
3. Cream the butter and sugar
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
4. Add the eggs and vanilla
Beat in the eggs, one at a time, then stir in the vanilla extract until smooth.
5. Mix in the bananas, pineapple, and coconut
