This tropical twist on a classic cake is bursting with flavors of fresh pineapple, ripe bananas, and a hint of coconut. Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1 cup diced fresh pineapple
  • 1/2 cup shredded coconut

Instructions:

1. Preheat the oven and prepare the pan

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or cooking spray.

Bake time: 10 minutes

2. Mix the dry ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

3. Cream the butter and sugar

In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.

4. Add the eggs and vanilla

Beat in the eggs, one at a time, then stir in the vanilla extract until smooth.

5. Mix in the bananas, pineapple, and coconut

Gently fold in the mashed bananas, diced pineapple, and shredded coconut until evenly distributed throughout the batter.

6. Bake the cake

Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool completely in the pan before removing. In the meantime, prepare the Mambo icing by mixing 1 cup of powdered sugar with 2 tablespoons of milk and a splash of vanilla extract until smooth.
