Ingredients:

  • 200g dark chocolate, chopped
  • 250g unsalted butter, softened
  • 200g granulated sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 200ml milk
  • 1/2 tsp peppermint extract
  • Green food coloring (optional)
  • For the Mint Chocolate Ganache:
  • 200g dark chocolate, chopped
  • 200ml heavy cream
  • 1/2 tsp peppermint extract
  • Green food coloring (optional)
  • For the Mint Buttercream Frosting:
  • 250g unsalted butter, softened
  • 500g powdered sugar
  • 1/2 tsp peppermint extract
  • Green food coloring (optional)

Preparation:

Step 1: Preparing the Chocolate Cake

In a Thermomix, melt the chopped dark chocolate on 50°C for 3 minutes at speed 2. Set aside to cool.

In the Thermomix bowl, cream together the softened butter and granulated sugar on speed 4 for 2 minutes until light and fluffy.

Add the eggs, one at a time, mixing well after each addition. Then, add the vanilla extract and mix until well combined.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the Thermomix bowl, alternating with the milk. Mix on speed 3 until just combined.

Add the melted chocolate, peppermint extract, and green food coloring (if desired) to the Thermomix bowl. Mix on speed 3 for 1 minute until the batter is smooth and evenly colored.

Step 2: Baking the Cake

Preheat your oven to 180°C.

Grease and flour two 9-inch round cake pans. Pour the cake batter evenly into the prepared pans.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

Step 3: Preparing the Mint Chocolate Ganache

In a small saucepan, heat the heavy cream on medium heat until it begins to simmer. Remove from heat.

Add the chopped dark chocolate, peppermint extract, and green food coloring (if desired) to the saucepan. Stir until the chocolate is completely melted and the ganache is smooth.

Let the ganache cool for 10-15 minutes, stirring occasionally, until it thickens slightly.

Step 4: Assembling the Cake

Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous amount of the Mint Chocolate Ganache on top.

Place the second cake layer on top and press gently to secure it. Pour the remaining ganache over the top of the cake, allowing it to drip down the sides.

Step 5: Preparing the Mint Buttercream Frosting

In the Thermomix bowl, cream the softened butter on speed 4 for 2 minutes until light and fluffy.

Add the powdered sugar, peppermint extract, and green food coloring (if desired) to the bowl. Mix on speed 3 for 1-2 minutes until the frosting is smooth and creamy.

Step 6: Frosting the Cake

Using a spatula or piping bag, frost the sides and top of the cake with the Mint Buttercream Frosting.

For an extra touch, decorate the cake with chocolate shavings, mint leaves, or any other desired toppings.

Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
