Ingredients:
- 4 hake fish fillets
- 300g peas, fresh or frozen
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 200ml vegetable broth
- Salt and pepper to taste
Preparation:
Preparing the Medallions:
1. Start by seasoning the hake fillets with salt and pepper on both sides.
2. Heat the olive oil in a pan over medium heat. Once hot, add the hake fillets and cook for 3-4 minutes on each side until they are golden brown. Remove from the pan and set aside.
Preparing the Pea Puree:
3. In the same pan, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
4. Add the peas and vegetable broth to the pan. Bring to a boil and then reduce the heat to a simmer. Cook for about 5 minutes or until the peas are tender.
5. Transfer the contents of the pan to the Thermomix and blend until smooth. Season with salt and pepper to taste.
Assembling the Dish:
6. Place the hake medallions back in the pan over low heat. Pour the pea puree over the medallions and let them simmer together for 3-4 minutes, allowing the flavors to meld.
7. Remove from heat and serve the medallions with a generous spoonful of the pea puree on top.
