Ingredients

  • 500g mixed seafood (shrimp, squid, mussels, etc.)
  • 1 head of lettuce, washed and torn into bite-sized pieces
  • 1 cucumber, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • For the dressing:
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons white vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste

Preparation

Step 1: Start by cooking the mixed seafood. Place the seafood in the Varoma dish and position it on top of the Thermomix. Fill the mixing bowl with 500ml of water. Set the temperature to Varoma at speed 1 and cook for 15 minutes.

Step 2: While the seafood is cooking, prepare the rest of the salad ingredients. Wash and tear the lettuce, thinly slice the cucumber, red bell pepper, and red onion. Halve the cherry tomatoes and chop the fresh parsley. Set aside.

Step 3: Once the seafood is cooked, remove it from the Varoma dish and set it aside to cool. Discard the cooking liquid from the mixing bowl.

Step 4: Place the cooled seafood in the mixing bowl and shred it by setting the temperature to 100°C at reverse speed 4 for 10 seconds. Transfer the shredded seafood to a large salad bowl.

Step 5: In a separate mixing bowl, combine the olive oil, lemon juice, white vinegar, Dijon mustard, minced garlic, salt, and pepper. Mix well to create the dressing.

Step 6: Pour the dressing over the shredded seafood in the salad bowl. Toss gently to coat the seafood evenly with the dressing.

Step 7: Add the prepared lettuce, sliced cucumber, red bell pepper, red onion, cherry tomatoes, and chopped parsley to the salad bowl. Toss everything together until well combined.

Step 8: Serve the delicious seafood salad immediately and enjoy!
