Ingredients:
- 4 zucchinis
- 250g mushrooms, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 400g diced tomatoes
- 200g tomato sauce
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 250g ricotta cheese
- 100g grated Parmesan cheese
- 200g shredded mozzarella cheese
Preparation:
1. Prepare the Zucchini:
Preheat your oven to 180°C (350°F). Using a mandoline slicer, thinly slice the zucchinis lengthwise. Sprinkle some salt on the slices and let them sit for about 10 minutes to remove excess moisture. Rinse the slices and pat them dry with a paper towel.
2. Prepare the Mushroom and Aurora Sauce:
In your Thermomix, add the onion and garlic. Process at Speed 5 for 5 seconds to chop them finely. Scrape down the sides of the bowl with a spatula.
Add the olive oil and mushrooms to the Thermomix. Cook at 100°C (212°F) for 5 minutes on Speed 1 until the mushrooms are tender.
Add the diced tomatoes, tomato sauce, dried oregano, dried basil, salt, and black pepper. Cook at 100°C (212°F) for 10 minutes on Speed 1 to allow the flavors to meld together.
Finally, blend the sauce at Speed 5 for 10 seconds until smooth. Set aside.
3. Assemble the Lasagna:
In a baking dish, spread a thin layer of the mushroom and Aurora sauce on the bottom. Arrange a layer of zucchini slices on top. Spread a layer of ricotta cheese over the zucchini slices, followed by a sprinkle of Parmesan cheese. Repeat these layers until all the ingredients are used, ending with a layer of zucchini slices on top.
4. Bake the Lasagna:
Cover the baking dish with foil and bake in the preheated oven at 180°C (350°F) for 30 minutes. Remove the foil and sprinkle shredded mozzarella cheese on top. Bake uncovered for an additional 10 minutes or until the cheese is melted and bubbly.
