Ingredients:
- For the crust:
- 200g of digestive biscuits
- 100g of melted butter
- 1 tablespoon of sugar
- For the filling:
- 500ml of milk
- 4 tablespoons of sugar
- 1 teaspoon of vanilla extract
- 4 eggs
- 1 packet of cuajada powder
- For the topping:
- 200g of your favorite fruit (strawberries, raspberries, etc.)
- 2 tablespoons of powdered sugar
Preparation:
Crust:
1. In the Thermomix bowl, add the digestive biscuits and crush them for 10 seconds on speed 8. The biscuits should resemble fine crumbs.
2. Add the melted butter and sugar to the biscuit crumbs. Mix for 15 seconds on speed 4 until well combined.
3. Press the mixture into the bottom of a tart pan, ensuring an even layer. Place the pan in the refrigerator to set while you prepare the filling.
Filling:
1. Rinse the Thermomix bowl and dry it thoroughly.
2. Pour the milk, sugar, and vanilla extract into the bowl. Heat for 5 minutes at 80°C on speed 3.
3. In a separate bowl, beat the eggs until well combined.
4. Add the beaten eggs to the milk mixture in the Thermomix bowl. Mix for 10 seconds on speed 4.
5. Add the cuajada powder to the bowl. Mix for 10 seconds on speed 3.
6. Pour the filling mixture over the prepared crust in the tart pan. Smooth the top with a spatula.
Baking:
1. Preheat the oven to 180°C.
2. Place the tart pan in the oven and bake for 25-30 minutes or until the filling is set and the top is golden brown.
3. Once baked, remove the tart from the oven and let it cool completely before adding the topping.
