Ingredients
- 4 large red bell peppers
- 100g walnuts
- 50g breadcrumbs
- 2 tablespoons pomegranate molasses
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Preparation
Step 1: Roast the Red Peppers
Preheat your oven to 200°C. Place the red peppers on a baking sheet and roast them in the oven for about 30-40 minutes or until the skins are charred and blistered. Remove them from the oven and let them cool.
Step 2: Remove the Skins and Seeds
Once the roasted red peppers are cooled, carefully peel off the charred skins and remove the seeds. Discard the skins and seeds, and set aside the flesh of the peppers.
Step 3: Prepare the Muhammara Mixture
In your Thermomix, add the walnuts, breadcrumbs, pomegranate molasses, olive oil, lemon juice, minced garlic, ground cumin, paprika, cayenne pepper, salt, and pepper. Blend the mixture on speed 5 for 10 seconds, or until the ingredients are well combined and have a slightly coarse texture.
Step 4: Add the Roasted Red Peppers
Add the roasted red peppers to the Thermomix bowl with the Muhammara mixture. Blend everything together on speed 5 for 15 seconds, or until you achieve a smooth and creamy consistency.
Step 5: Adjust the Seasonings
Taste the Muhammara and adjust the seasonings according to your preference. Add more salt, pepper, or spices if desired. Blend for a few more seconds to incorporate the additional seasonings.
Step 6: Serve and Enjoy
Transfer the Muhammara to a serving bowl and drizzle with a little olive oil. Garnish with some chopped walnuts and a sprinkle of paprika. Serve the dip with pita bread, crackers, or fresh vegetables. Enjoy the burst of Middle Eastern flavors!
