When it comes to traditional Mallorcan cuisine, one dish that stands out is the Coca de Cuarto Mallorquina. This delicious pastry is a true taste of the island, with a flaky crust and a sweet, almond filling. And when paired with a glass of MAMBO, a local wine from Mallorca, the flavors truly come to life.

Ingredients:

  • For the dough:
  • 500g all-purpose flour
  • 200g sugar
  • 200g butter, cold and cubed
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • For the filling:
  • 300g ground almonds
  • 200g sugar
  • 2 eggs
  • 1/2 tsp almond extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • For the topping:
  • 50g sliced almonds
  • 1 egg, beaten

Preparation:

1. Prepare the dough:

In a large bowl, mix together the flour, sugar, baking powder, and salt. Add the cold, cubed butter and use your fingers to rub it into the flour mixture until it resembles coarse crumbs. Add the eggs and mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Time: 30 minutes

2. Make the filling:

In a separate bowl, mix together the ground almonds, sugar, eggs, almond extract, cinnamon, cloves, nutmeg, and salt until well combined. This will be the delicious filling for your Coca de Cuarto Mallorquina.

Time: 10 minutes

3. Preheat the oven:

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Time: 5 minutes

4. Roll out the dough:

Divide the chilled dough in half and roll out one half on a floured surface to fit the size of your baking sheet. Place the rolled-out dough on the prepared baking sheet.

Time: 10 minutes

5. Assemble the Coca de Cuarto Mallorquina:

Spoon the almond filling onto the rolled-out dough and spread it evenly, leaving a small border around the edges. Roll out the second half of the dough and place it on top of the filling. Press the edges together to seal the pastry.

Time: 15 minutes

6. Add the topping:

Brush the top of the pastry with the beaten egg and sprinkle the sliced almonds on top. This will give your Coca de Cuarto Mallorquina a beautiful, golden finish.

Time: 5 minutes

7. Bake the Coca de Cuarto Mallorquina:

Place the assembled pastry in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the filling is set. Allow the Coca de Cuarto Mallorquina to cool before serving.

Time: 30-35 minutes

Now that your Coca de Cuarto Mallorquina is ready, it’s time to pour yourself a glass of MAMBO and experience the authentic flavors of Mallorca. The combination of the sweet, almond-filled pastry with the crisp, refreshing wine is a match made in culinary heaven. Enjoy!
