Patatas Aliñadas, also known as «Aliñás» in Andalusia, is a popular Spanish dish made with boiled potatoes that are then dressed with a flavorful vinaigrette. This refreshing and versatile dish is perfect for summer picnics, tapas, or as a side dish for grilled meats. The combination of tender potatoes and tangy dressing makes Patatas Aliñadas a true culinary delight.

Ingredients:

  • 1 kg (2.2 lbs) potatoes
  • 1 red onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Preparation:

Step 1: Boiling the Potatoes

Start by washing the potatoes thoroughly. Then, place them in a large pot and cover them with cold water. Add a pinch of salt to the water to enhance the flavor of the potatoes. Bring the water to a boil over high heat, and then reduce the heat to medium-low. Let the potatoes simmer for about 20-25 minutes or until they are fork-tender.

Time: 20-25 minutes

Step 2: Preparing the Dressing

In the meantime, you can prepare the dressing for the Patatas Aliñadas. In a bowl, combine the finely chopped red onion, green bell pepper, minced garlic, fresh parsley, and cilantro. Mix well to combine all the ingredients.

In a separate small bowl, whisk together the extra virgin olive oil, white wine vinegar, Dijon mustard, salt, and pepper until well emulsified. This will be the vinaigrette dressing for the potatoes.

Step 3: Dressing the Potatoes

Once the potatoes are cooked, drain them and let them cool slightly. Once they are cool enough to handle, peel off the skin and cut them into bite-sized cubes. Place the cubed potatoes in a large serving bowl.

Pour the vinaigrette dressing over the potatoes and gently toss them until they are well coated. Be careful not to break the potatoes while mixing.

Step 4: Letting the Flavors Infuse

Cover the bowl with plastic wrap and refrigerate the Patatas Aliñadas for at least 1 hour to allow the flavors to infuse. This will enhance the taste of the dish and make it even more delicious.

Step 5: Serving and Enjoying

Once chilled, remove the bowl from the refrigerator and give the Patatas Aliñadas a gentle toss. Garnish with some additional chopped parsley or cilantro if desired. Serve as a side dish, tapas, or enjoy it as a light and refreshing main course.

Note: Patatas Aliñadas can be served immediately after dressing the potatoes, but allowing it to marinate in the refrigerator will enhance the flavors. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
