Ingredients:

  • 2 large eggplants
  • 1 cup all-purpose flour
  • 2 cups breadcrumbs

  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 2 cups tomato sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Preparation:

1. Preheat the oven to 375°F (190°C).

2. Slice the eggplants into 1/4-inch thick rounds. Sprinkle salt on both sides of the eggplant slices and let them sit for about 10 minutes to remove excess moisture. Pat dry with paper towels.

3. In a shallow dish, combine the flour, dried oregano, dried basil, salt, and black pepper. In another shallow dish, beat the eggs. Place the breadcrumbs in a third shallow dish. Dip each eggplant slice into the flour mixture, then the beaten eggs, and finally coat it with breadcrumbs. Repeat until all the eggplant slices are coated.

4. Heat the olive oil in a large frying pan over medium heat. Cook the breaded eggplant slices for about 3-4 minutes on each side, or until golden brown. Remove from the pan and drain on paper towels to remove excess oil.

5. In the Thermomix, add the tomato sauce, dried oregano, dried basil, salt, and black pepper. Cook at 100°C for 5 minutes.

6. In a baking dish, spread a thin layer of the tomato sauce mixture. Arrange a layer of the fried eggplant slices on top of the sauce. Sprinkle with shredded mozzarella cheese and grated Parmesan cheese. Repeat the layers until all the eggplant slices are used, ending with a layer of cheese on top.

7. Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly and the sauce is hot and bubbly.

8. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil leaves, if desired.
