Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 cup pumpkin puree
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 cup chopped walnuts
Preparation:
1. Preheat the oven and prepare the pan
Preheat your oven to 350°F (180°C) and grease a 9-inch round cake pan with butter or cooking spray.
Temperature: 350°F (180°C)
2. Mix the dry ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until well combined.
3. Cream the butter and sugars
In the mixing bowl of your Thermomix, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Add the eggs and pumpkin
Beat in the eggs, one at a time, until fully incorporated. Then add the pumpkin puree and mix until smooth.
5. Alternate adding dry ingredients and milk
With the Thermomix running on low speed, gradually add the dry ingredients and milk in three additions, starting and ending with the dry ingredients. Mix until just combined.
6. Stir in vanilla and walnuts
Add the vanilla extract and chopped walnuts to the batter, stirring until evenly distributed.
7. Bake the cake
Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Temperature: 350°F (180°C)
Time: 45-50 minutes
8. Cool and serve
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and serve the cake on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
