Ingredients

  • 500ml whole milk
  • 100g white sugar
  • 1 cinnamon stick
  • 1 lemon peel
  • 3 egg whites
  • 1 tablespoon white sugar
  • Ground cinnamon for garnish

Preparation

Step 1: Infusing the Milk

In your Thermomix, add the milk, 100g white sugar, cinnamon stick, and lemon peel. Set the temperature to 90°C and the time to 8 minutes, with the speed set to 1.

Step 2: Cooling the Milk

Once the milk has been infused, remove the cinnamon stick and lemon peel. Allow the milk to cool completely in the Thermomix bowl.

Step 3: Preparing the Meringue

In a separate bowl, add the egg whites. Set the Thermomix to Butterfly mode and whisk the egg whites at speed 3.5 for 3 minutes. Gradually add 1 tablespoon of white sugar while whisking until stiff peaks form.

Step 4: Combining the Milk and Meringue

Gently fold the prepared meringue into the cooled milk mixture until well combined. Be careful not to overmix and deflate the meringue.

Step 5: Chilling and Serving

Pour the Leche Merengada into individual glasses or bowls. Place them in the refrigerator to chill for at least 1 hour. Before serving, sprinkle some ground cinnamon on top for garnish.
