Ingredients
- 200g of cookies
- 100g of butter
- 400g of condensed milk
- 100g of sugar
- 100g of water
- 200g of heavy cream
- 1 tsp of vanilla extract
Preparation
Cookie Base
Preheat the oven to 180°C.
- Crush the cookies in the Thermomix until they have a fine crumb texture.
- Melt the butter in the Thermomix at 90°C for 3 minutes.
- Mix the crushed cookies with the melted butter until well combined.
- Press the cookie mixture into the base of a lined baking dish.
- Bake in the preheated oven for 10 minutes.
- Remove from the oven and allow to cool completely.
Caramel Cream Filling
- In the Thermomix, combine the condensed milk, sugar, and water.
- Cook at 100°C for 10 minutes until the mixture thickens and turns a golden caramel color.
- Add the heavy cream and vanilla extract to the caramel mixture.
- Cook at 90°C for 5 minutes until well combined.
- Pour the caramel cream over the cooled cookie base.
- Refrigerate for at least 2 hours to set.
Serving
